No Bake Oatmeal Cookie Bites

Back to school! Whew what a summer! We went non stop (as usual) and are now ready to get back into our school year routine. With that routine comes the school day snacks, and some of my favorite things to make are snacks from scratch so when I asked the girls what they wanted for a new school lunch, our No Bake Oatmeal Cookie Bites were born! They’re a healthy, tasty, fueling treat that the girls’ love almost as much as I love packing them in their lunchboxes!

Ingredients Needed

a bowl of oats, dates, raisins, maple syrup, vanilla extract, cinnamon, salt, and walnuts all labeled.
  • Whole Oats – Instant oats will also work for this recipe, but I find that whole oats work the best.
  • Raisins – Can’t have an oatmeal raisin cooking without them!
  • Dates – The binder of it all and also adds a subtle date flavor as well as fiber, potassium, and antioxidents!
  • Walnuts – While maybe not found in all oatmeal raisin cookies, we love them in ours because of the added crunch and flavor!
  • Maple Syrup – The sweetner and another binding agent. Honey can also be used!
  • Cinnamon, Vanilla Extract, and Salt – To add just the right flavor to round out these cookie bites.

Ready in Minutes

The best part of these little delicious bites is that they’re ready in just minutes! With your blender or food processor, just add those dates, most of the oats, maple syrup, vanilla extract, salt, and cinnamon and blend until a slightly sticky crumbly dough forms.

Then it’s time to add a few more oats in with the raisins to shape into delightful little balls! The additional oats are totally optional. You can just blend them all together, I just like the look of some of the full oats when rolled, but that’s totally a personal preference for appearance.

Shaping

This “dough” will need a few squeezes in your hands to shape and stick together. It’s sticky enough to shape into balls but does requrie a squish in your hand to shape.

Equipment

Ingredients

  • 1 cup whole oats plus 1 tablespoon, divided and optional
  • 5 pitted dates
  • 1/3 cup raisins
  • 3 tablespoons maple syrup
  • 1/4 cup walnuts
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine ground salt

Instructions

  • Blend: Add dates, 1 cup of oats, maple syrup, walnuts, vanilla extract, cinnamon, and salt to a food processor or blender and blend until a crumbly sticky "dough" forms.
  • Mix: Add the "dough" to a medium-sized bowl and add the raisins and optional 1 tablespoon of oats and mix well.
  • Shape: Shape into small balls by placing some dough in your palm, squeezing it together, and then rolling it into a ball shape. Repeat for all of the dough.
  • Enjoy!

Notes

Storage: Store in an airtight container on the counter for up to 5 days or in the fridge for up to two weeks.
Substituations
Oats: Instant oats can also be used.
Maple Syrup: Honey is another good choice!
Walnuts: Can be excluded if desired or substituted for pecans or almonds.
