10 Minute Peanut Noodles

The sun is shining and the weather is warming up! That means it’s time to spend more time outside and less time in the kitchen. Our 10 Minute Peanut Noodles recipe is the perfect super quick, super easy noodle recipe for the peanut lover! You can have a protein-packed lunch or dinner in just minutes. This peanut butter sauce is so creamy, flavorful, and requires no cooking. These peanut butter noodles could not be any easier!

Ingredients Needed

  • Noodles – Our favorite for this recipe are soba noodles, but you could use any of your other favorite rice noodles or pasta. We suggest a thicker noodle though, whatever you use. Vermicelli or thin rice noodle or angel hair pasta we find to be a little too thin/delicate a noodle for this creamy hearty sauce.
  • Peanut Butter – Use your favorite creamy peanut butter – like a homemade from scratch one!
  • Soy Sauce, Peanut Oil, Seasoned Rice Vinegar, and Chili Garlic Sauce and Lime Juice – The flavor, acidity, and umami enhancers of the sauce.
  • Honey – An all-natural sweetener. You can also use maple syrup (it will add a little delightful maple flavor), or you can use brown sugar.
  • Garlic and Ginger Powder – Just a touch. You could use fresh raw ginger or garlic too, but I prefer ground in this dish because it better evenly distributes the flavor.
  • Salted Peanuts and Green Onions – Some added crunch to finish the dish.
  • Fresh Cilantro – For the right bright finish!

One of the best parts of these peanut butter noodles? How fast and easy they are to make! The sauce is a raw sauce that just requires mixing in a bowl until creamy. Btw, we’ll be dipping all sorts of deliciousness into this sauce in the future – stay tuned for all of the ways we use it!

Tip: Measure your peanut oil out first in the tablespoon and then pour in your honey. The oil will have coated the measuring spoon and then the honey will easily pour right out of the tablespoon and into your bowl.

Then add your cooked noodles and give ’em a good stir to get coated in all of that peanut sauce goodness!

The final step to completing these peanut noodles, more peanuts! And fresh cilantro and chopped green onions for the right amount of fresh crunch.

Tips and Tricks

Use your favorite noodle, and adjust the cooking time accordingly

I love using soba noodles because they cook so fast and they’re hearty enough to hold up to this creamy peanut sauce. While the package says to cook in boiling water for 4 minutes, I find that 3 1/2 minutes is the perfect amount of time. There’s nothing worse than mushy noodles, especially with a thick sauce like this!

Prepare the sauce first before cooking noodles

The sauce itself takes no time at all to come together, but you want to make sure it’s done before the noodles. So we prep the sauce while the water is coming to a boil so you don’t overcook the noodles, or that they are left to sit draining while you finish the sauce. The cooked noodles should be added immediately to the peanut sauce to prevent clumping and also to add a little bit of that cooking liquid to the sauce as it all mixes together.

Drain the noodles, but not too much

Of course, drain your noodles once they’re done, but don’t leave them to drain or shake off all of the excess liquid. A little bit of the cooking liquid on your noodles will help loosen the peanut sauce a little and that starch from the water will help that sauce coat your noodles.

Don’t Rinse your noodles

While it’s often said you should rinse your noodles to prevent them from getting gummy or clumpy, with this recipe, skip the rinsing as long as you’re immediately adding your noodles to your peanut sauce. The thick creamy peanut sauce needs that starch so it’ll cling to the noodles.

Adjust the heat

Make them spicy peanut noodles by finishing them with some sriracha or upping the garlic chili sauce with the peanut sauce.

Measurement Tips

Save yourself the hassle of measuring out peanut butter in a measuring cup and just measure by weight with a handy dandy kitchen scale. Also, add the peanut oil first and then pour the honey into the tablespoon and then add. The honey will then slide right off and you’ll get the perfect measurement.

Once done and all mixed together, that sauce will coat the noodles perfectly!

Noodles in 10 minutes? It doesn’t get much faster or easier than this! This was a fun one to create, friends. SO much peanut noddle deliciousness happening in our house lately, and with how fast it is to throw together and the fact that all of the ingredients are staples in our house, it’ll be a regular on rotation for sure.

  • Add a large pot of unsalted water to stovetop and heat on high to bring to a boil.
  • Meanwhile, in a medium to large sized bowl, add peanut butter, honey, soy, peanut oil, rice vinegar, lime juice, chili garlic sauce, ground ginger, and garlic powder. MIx well into a creamy thick sauce.
  • Once the sauce is made and water is boiling, add the soba noodles and let boil for 3 1/2 minutes.
  • Drain noodles, give just one shake in the colander and then immediately add them to the sauce – a little bit of the cooking liquid will help loosen the sauce a bit and help coat the noodles with the sauce.
  • Mix well with tongs ensuring that all of the noodles are coated in the peanut sauce.
  • Top with peanuts, green onions, and cilantro. Add sriracha if desired. Serve hot or cold.

Notes

Cooking the Noodles
While most soba noodles take only about 4 minutes to cook, we’ve found with this recipe the perfect time is 3 minutes 30 seconds.  This ensures that you won’t have mushy overcooked noodles. 
Be sure to drain the noodles but don’t let them sit.  Add them immediately to the peanut sauce. Some of the starchy cooking water will also help loosen the sauce a little and allow the sauce to stick better to the noodles.  
Substitutions 
Soba Noodles – Use your favorite noodles or pasta, but we don’t recommend vermicelli or thin rice noodle, or angel hair pasta because they’re a little too thin/delicate a noodle for this creamy hearty sauce.  Whatever noodle you use, be sure to follow the cooking recommendations for each noodle/pasta as they will vary.   
Rice Vinegar –  Be sure to use seasoned because it has much more flavor necessary for this sauce. 
Honey – You can also use maple syrup or 1 tablespoon of brown sugar.  
Garlic and Ginger – for the 1/4 teaspoon of ground, you can use 1 scant teaspoon of minced fresh for each. 
Chili Garlic Sauce – Omit, or increase for a little more kick!
Sriracha – Finish with for a little added heat!
