Easy Romesco Dip

Our Easy Romesco Dip turns the Spanish classic sauce into an easy to make, subtly sweet and smoky dip or condiment!

I love this dip. Not only is it incredibly easy to make, but it’s has the sweetness of red peppers, nuttiness from the almonds, and the just right amount of smokiness from roasting the veggies. All blended up to a just the right chunky, dipable consistency to make our Easy Romesco Dip perfect for a slice of crusty bread, a cracker, on a sandwich, or on top of some fresh cooked fish.

What is Romesco?

Romesco is a sauce that originates from the Catalonian region of Spain. Typically called and used as a sauce, this vibrant and flavorful recipe has many variations (as most regional dishes do), but its base is typically made up of red peppers, tomatoes, nuts, oil, and vinegar. Traditionally, it was served with fresh fish, but now it can be used in a variety of ways such as a pasta sauce, condiment, or appetizer.

Ingredients Needed

  • Red Bell Peppers – The sweet slightly earthy base of this dip.
  • Roma Tomato – We love romas for this recipe, but you can use whatever you have. Garden grown is even better!
  • Almonds – A fair amount of nuttiness added from toasted almonds, but you can also use hazelnuts!
  • Crusty Bread Just enough to thicken the texture of this dip. We love to serve this with a our Easy Crusty French Baguette and so we just add an end of that to this sauce and serve it with the rest!
  • Olive Oil and Vinegar – For flavor, acidity, and to loosen it all into a delicious dipable and spreadable consistency.
  • Garlic – Roasted with the peppers and tomatoes!
  • Seasoning – Just a bit of salt and pepper and some smoked paprika.
  • Parsley – Just enough to add a bit of herbal freshness and to garnish with.

Roast and Toast

The first step – and the most important to build flavor – is roasting the veggies and toasting the almonds!

Peeling

Just as we do with our Roasted Tomato Salsa, once the tomato and red peppers are roasted, gently peel off the papery skins. This will create a smoother dip. Don’t worry about getting even last piece off of the bell peppers, most or whatever you can peel off easily is enough.

Blend

Once the veggies are roasted and the almonds gently toasted, then it’s just a matter of adding it all to a food processor and blending until nice and thick and creamy.

Easy Romanesco Dip

Ingredients

  • 2 red bell peppers
  • 1 roma tomato
  • 1/2 cup sliced almonds toasted
  • 2 tablespoons white wine vinegar
  • 1/4 cup olive oil
  • 1/2 cup crusty bread about 1 oz or 30 g
  • 3 cloves garlic
  • 1 1/2 teaspoons smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon fresh parsley

Instructions

  • Roast Peppers: Heat oven to 425℉ and line a small baking tray with foil. Slice the bell peppers in half, core, and add them cut side down to the tray. Halve the roma tomato and add it cut side down to the tray. Add garlic cloves to the tray. Roast for 20 minutes.
  • Toast Almonds: Meanwhile, heat a dry skillet over medium heat on the stove. Add the sliced almonds and toast for 3 minutes, stirring and shaking the pan often for even toasting.
  • Blend: Once the peppers are roasted, gently remove the skins (as much as you can) from the bell peppers and tomato halves. Add the peppers, tomato, and garlic to the bowl of the food processor and add the rest of the ingredients. Blend until creamy.
  • Serve and Enjoy! Serve with sliced bread, crackers, veggies, or as a condiment on sandwiches.

Notes

Storage: Store in the fridge for up to 5 days. 
Substitutions
Tomato: Use your favorite!
Almonds: Hazelnuts or pine nuts are other delicious choices. If using hazelnuts, do your best to skin after roasting or buy skinned.
Vinegar: Red wine vinegar or apple cider vinegar will also work.
Crusty Bread: Some baguette or any other artisan bread works best for this.
