Bring on the summer cocktails! There aren't a lot (yet) here on SFS, but let me just tell you, the ones we do have, are good. And let me just say that this one, our Frozen Watermelon Daiquiri is even better! It is everything you want from a frozen drink, it's refreshing, it's cooling, and it's absolutely delicious with a lil' let's get this party started with a kick! This daiquiri is one that we have a lot of fun testing, and you'll have a lot of fun drinking!
What is a Daquiri?
A classic daiquiri is not frozen. It's actually one of the six basic drinks as outlined in The Fine Art of Mixing Drinks by David A. Embury. The classic version is a simple cocktail served straight up made of rum, citrus juice, and sugar or another sweetener. Today, many of us first think of a fruity colorful frozen drink when we first think of Daquiri, but really, its beginning is one of a simple yet elegant cocktail.
Best Rum for Daquiris
You can really use whatever rum you'd like for a frozen daiquiri, but when it comes to the sweeter frozen variety, white rum is the best choice because its sweetness will lend itself nicely to the citrus flavors in this Frozen Watermelon Daquiri. However, a lighter dark rum would also be great, too. A dark rum gets its color from being aged longer in barrels which gives it a richer more complex flavor that would overpower the delicate sweet flavor of the watermelon.

Easy to Make
Freeze Some Watermelon
This is what gives this frozen daiquiri the texture and flavor that you want without ice! Using ice cubes can water down the flavor of your drink, but by freezing some watermelon, you're using the water already naturally found in the watermelon, but still maintaining all of the flavor! We played around with a few ways to do this and still get the right flavor and texture for a Frozen Watermelon Daiquiri, with an emphasis on the frozen!
Muddle Mint and Lime Juice
Next, to add that fresh mint flavor but leave out the little chunks of fresh mint from your drink, muddle some lime juice with the fresh mint to infuse that mint flavor into the fresh lime juice.
Add to Blender
Once your watermelon cubes have frozen, it's time to add them, and some fresh watermelon, to a blender. Then, use a sieve to add that minty lime juice, too! With of course, the rum!
Blended all together! The frozen watermelon cubes with the fresh watermelon creates a great thick frozen texture.
Serve in your favorite fun cocktail glasses for Frozen Watermelon Daiquiri made with the simplest of ingredients that highlight all of that fresh sweet watermelon flavors!
Recipe Tips
The best way to freeze the watermelon to prepare for this frozen fruit daiquiri is to first cut it into cubes, then flash freeze it on a tray for about an hour. Then transfer to a freezer-safe container. This way, the cubes will stay separate in your container.
Once you've done the flash freeze, let the watermelon freeze for another 3 hours, at least. I usually prep the watermelon the day before I plan to make the frozen daiquiris to ensure that they're fully frozen.
We've found that if you use all frozen watermelon, the consistency of the daiquiri is way too thick. The best way to create a frozen drink that's thick but still pourable is to use a mixture of fresh and frozen watermelon. This will ensure the ultimate watermelon flavor!
This recipe makes 2 about 10 oz drinks.
We love our margarita glasses for this one, and these are about 14 oz which leaves plenty of room for this drink. Be sure to use glassware that holds at least 10 oz. You can use margarita-style glassware like this or hurricane-style glass like this. Use whatever you have that makes you feel fancy!

Frozen Watermelon Daiquiri
Equipment
- or another high-powered blender
Ingredients
- 4 cups cubed watermelon divided
- 1/3 cup light rum
- 2 tablespoons lime juice
- 6 large mint leaves
Garnish
- small triangles of on the rind watermelon
- fresh mint leaves
Instructions
- Freeze Watermelon: Add 3 cups of cubed watermelon to a baking tray and flash freeze for 1 hr. Add to a freezer-safe container and freeze for another 3 hours, at least.
- Muddle Lime and Mint: Use a mortar and pestle to muddle mint and lime together by adding mint leaves to the mortar with lime juice and use the pestle to grind mint leaves into the lime juice. See recipe notes if you do not have a mortar and pestle.
- Blend: Add 3 cups of frozen watermelon to the Vitamix or high-powered blender with 1 cup of fresh cubed watermelon. Place a sieve over the top of the blender and pour lime juice into the blender using the sieve to catch the ground mint leaves. Add rum. Blend until all watermelon chunks are blended smooth.
- Serve: Pour into your favorite large margarita style glassware and garnish with watermelon slices and more fresh mint!
