Hot Rueben Dip

It’s everything you love about the classic sandwich, but in a delicious appetizer! Our Hot Reuben Dip is a great way to put leftover corned beef to good use, with all the flavors you love from Reubens!

It’s a hot dip love child with my husband’s favorite sandwich, the Reuben! It has all of the components and flavors you want from this classic sandwich, but baked into a super cheesy dip that everyone can enjoy. Our Hot Reuben Dip has it all: corned beef, Swiss cheese, Russian Dressing, sauerkraut, and caraway seed to give you that necessary and distinctive rye bread flavor!

Why You’ll Love This Dip

If you love Reubens, you’ll love this dip! Yes, there are many versions of a Reuben dip out there, but what sets ours apart from the others is two main ingredients: Homemade Russian Dressing and Caraway Seeds. While many Reubens these days are made with Thousand Island dressing, traditionally, Reubens are made with Russian Dressing, which, if you’ve tried to find it in the grocery store recently, you’ve probably struck out. No problem, we make our own! This homemade dressing, and the addition of caraway seeds (which give the very distinct flavor (and aroma) of rye bread) make our Hot Reuben Dip a step above the rest!

  • Corned Beef – You can, of course, make corned beef just for this, or this dip is a great way to use up that leftover corned beef!
  • SauerkrautUse whatever brand is your favorite, or if you’re feeling really adventurous (and have a lot of time!), you can make your own!
  • Russian Dressing – THE dressing of a traditional Reuben sandwich, but it is very hard to find, so we make our own! Thousand Island dressing will also work, but making your own Russian dressing takes just minutes, and it’s 100% worth the effort!
  • Swiss Cheese – This is the classic cheese of a Reuben, and we use plenty of it!
  • Cream Cheese – While not found in a traditional Reuben, it is found as a base for a delicious cheesy dip!
  • Dijon Mustard – Just a touch to give it a little extra flavor and kick – emphasis on kick if you make your own with our recipe!
  • Caraway Seeds – The secret weapon of this recipe! This is what gives this dip the Rye Bread flavor and essence without the rye bread. It makes the whole dip smell just like a Reuben sandwich!

Easy to Make

Mix the Filling

Once you decide how much from scratch flair you’re going to add to our Hot Reuben Dip, soften the cream cheese, dice the corned beef, and add the sauerkraut, dijon, and Russian dressing, and give it all a good mix!

Layer

Next, it’s just a matter of assembling the dip with all of its Reuben glory! Some of the mixture, a layer of Swiss, a layer of Russian dressing, and more of the filling.

Bake

One last layer of Swiss cheese, then bake until it’s all a melty, cheesy goodness!

Our Favorite Dip Vehicles

We loved this dip with so many different vehicles. Pictured is Triscuit Crackers, which are one of the favorites, but also amazing were Rye Crackers (there are so many to choose from), and if you really want to go the extra from scratch mile, our Everything Bagel Rye Crackers (finished with just salt and not our Everything Bagel Seasoning) are an amazing choice, too! Or you can use little rye bread toast triangles! They won’t be as scoopable, but can still work with the use of a spoon.

  • Preheat Oven: Preheat oven to 375℉.
  • Prep Filling: Soften the cream cheese by adding it to a medium-sized bowl and microwaving it for 30-45 seconds. Add 1/3 of a cup of the Russian dressing, sauerkraut, corned beef, caraway seeds, and Dijon mustard to the bowl and mix well.
  • Layer Dip: In a 2 qt baking dish, add 1/2 of the filling mixture to the bottom of the dish (it's ok if it does not completely cover the bottom of the dish). Then add a layer of the sliced Swiss cheese (4-5 slices) and the rest of the Russian dressing on top of the cheese. Smooth the dressing to a thin, even layer. Add the remaining filling mixture, and then top with the rest of the Swiss cheese.
  • Bake: Cover the baking dish with aluminum foil and add it to the center rack of the oven. Bake covered for 15 minutes. Remove foil and bake for another 15 minutes until the cheese is slightly browned and bubbly.
  • Serve and Enjoy! Serve with your favorite crackers, chips, or with rye bread toast points.

Storage
Store leftovers in the fridge in and airtight containers for up to 3 days. 
Serve it With
Triscuits, Rye Chips, Bagel chips, Rye Bread toast points, or our Rye Crackers (with just salt, not the everything bagel seasoning), or these Light Rye Crackers.
Sustitutions
Russian Dressing: We highly recommend making your own, but Thousand Island will also work. 
Swiss Cheese: While Swiss is the most traditional for a Reuben, you can also use Mozzarella, Gouda, or Provolone.
