Cheesy Sausage Balls

A Southern classic! Our Cheesy Sausage Balls are an easy, no-fuss, cheesy, and delicious meatball appetizer that makes a perfect one-bite snack for any party or gathering.

Inspired by the fabulous southern ladies in my life, I bring you our latest and greatest new appetizer just in time for all of the end-of-the-year parties, our Cheesy Sausage Balls! These little bites of deliciousness are so easy to throw together and make the perfect little one bite snack for a party, game day, brunch, or just because. Whatever the occasion, these little cheesy meatballs will be welcome!

What Are Sausage Balls

When it comes to party appetizers, there are meatballs and then there are sausage balls. Sausage balls are a classic Southern snack that can be served any time of the day and are made with sausage, cheese, and a binding agent, which if you’re making a true Southern sausage ball, would be Bisquick. Commonly found with just 3 ingredients, these little meaty cheesy bites are a favorite for how easy they are to make and how tasty they are to eat, especially when dipped in sauces!

Ingredients Needed

  • Ground Sausage – We use a mild ground breakfast sausage, but you can use any of your favorites!
  • Pancake Mix – This key ingredient makes these sausage balls Southern. While most Southern recipes call for Bisquick (which you can totally use!), we use our Homemade Pancake Mix From Scratch.
  • Cheeses – The “cheesy” for these Cheesy Sausage Balls! We love a combination of a sharp cheddar and Parmesan, but you can also use just all cheddar or a mixture of cheddar and mozzarella.
  • Spices – Just a little onion, garlic, and parsley!

So Easy to Make

One of the best parts of this Southern gem of an appetizer is that it is so easy to make. Just mix the pancake mix and herbs and spices quickly, add the cheese to the sausage, and then mix!

After a good mix, it’s all ready to roll (pun intended!).

Keep Mixing!

When you first start mixing it all together, it will feel like you have way too much pancake mix, but don’t worry, just keep mixing! As you mix, it will absorb into the sausage and you will have a nice fully incorporated sausage and cheese mixture.

Roll into little 3/4 to 1-inch balls and add to a parchment paper lined baking tray and bake!

Sausage Ball Size

While you can totally make these Cheesy Sausage Balls any size you like, the true Southern size is a demure and mindful little 3/4 to 1-inch ball. This is because it needs to be a very small and manageable one bite. As I was told by my southern girlfriends, you should never have to take more than one bite of a sausage ball.

Serve Them With

Equipment

Ingredients

  • 1 lb ground sausage
  • 1 cup pancake mix or Bisquick, 145 g
  • 1 cup cheddar cheese 2.7 oz
  • 1/4 cup Parmesan cheese .65 oz
  • 3/4 teaspoon dried parsley
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions

  • Preheat Oven: Preheat oven to 350℉ and line a baking tray with parchment paper.
  • Mix: Add pancake mix, parsley, onion, and garlic powder to a small bowl and mix. Add sausage and cheddar and parmesan cheese to a large bowl. Add the seasoned pancake mix and mix well. Keep mixing for a couple of minutes as the more you mix the more the pancake mix will incorporate.
  • Roll: Gather some of the sausage mixture and roll into 3/4 – 1 inch balls and add to parchment paper lined tray. Repeat with all sausage mixture.
  • Bake: Bake in the middle rack of the oven for 20 minutes.
  • Serve and Enjoy hot with toothpicks and your favorite dipping sauce

Notes

Storage
Fridge: Store in the fridge for 3-4 days.
Freezer: Store cooked sausage balls in the freezer for up to 2 months. 
Ball Size
While the traditional Southern size for sausage balls is 3/4 to 1 inch, you can of course make them in any size you prefer. Just be sure that they are cooked to at least 160 degrees F. 
Make Ahead
Roll the sausage balls and flash freeze them on a baking tray for 1-2 hours before transferring them to a freezer-safe container or plastic bag and freezing them for up to 6 months. Cook them frozen in a 350-degree F oven for 20-25 minutes. 
Substitutions
Pancake Mix: You can also use Bisquick or your other favorite premade pancake mix with baking soda and a little bit of sugar.
Cheeses: Use all sharp cheddar or add in other cheeses like white cheddar, mozzarella, or pepper jack cheese for a little kick or some mozzarella.
