Strawberry Kiwi Popsicles

Everything you love about this classic fruit flavor combination, but served in a delicious fresh fruit popsicle! Our Strawberry Kiwi Popsicles are made with just 4 ingredients and are a refreshing healthy snack!

Bring on the refreshing summer treats! Homemade popsicles are one of my favorite things to make for my girls, because not only are they so easy to make, but we can also control exactly what goes into them and rely on the sweetness of the natural fruit over all of the added sugar you’ll find in store-bought fruit popsicles. Our new Strawberry Kiwi Popsicles are made with just 4 simple ingredients, have no added sugar, and are a delicious and refreshing summer snack that highlights the fruit of this classic flavor combination!

Ingredients Needed

a bowl of kiwis, strawberries, a lemon, and a small bowl of chia seeds.
  • Fresh Strawberries – We love picking our own strawberries out here in Oregon and this is a great strawberry recipe to use them with! You can of course use frozen strawberries, too.
  • Fresh Kiwis – Kiwis are a fruit that I think is so underrated. They are powerhouse little fruits packed with so much Vitamin C and fiber and they have such a wonderfully vibrant color!
  • Lemon Juice – Just enough acidity to highlight but not overpower all of the fresh fruit flavors.
  • Chia Seeds – These are optional, but I absolutely love to add these little fiber, protein, and omega-3 fatty acids packed seeds wherever we can.

So Easy to Make

Blend the Fruit

The first step for these super easy 100% real fruit popsicles is to blend up the fruit with a little bit of lemon juice and chia seeds for additional nutrition. You can use any blender, we love our Vitamix because it makes blending anything a breeze.

Then add each of the blended fruits to their own pour-spouted measuring cups to make pouring them into the popsicle molds nice and easy.

Add to Popsicle Molds

Here’s the fun part, adding the blended fruits to the popsicle molds! We love these molds, especially since they make filling them so easy!

We love to layer the different mixtures and then use a butter knife to spread the fruit just a bit for a fun design, but you can, of course, leave it as layers, you do you!

Pop the lids on and these healthy fruit popsicles are ready to freeze!

Strawberry Kiwi Popsicles! My littlest hand model asked me approximately 12x an hour when these popsicles were ready so she could taste test, her favorite part of recipe creation, and this is one of her favorites!

So fun. So colorful. So HEALTHY. Because these fresh fruit popsicles are made up of just that, fresh fruit, they make for a really fun summer breakfast. And snack. And dessert. And just anytime you want something cool and refreshing that’s not loaded with added sugar.

Recipe Tips

Use any of your favorite fruits!

Strawberry and Kiwi is such a classic fruit combo for me, but you could use any of your favorite fruits! Strawberry Banana, Blueberry Raspberry, Cherry Apricot, the possibilities are endless!

How big are the molds?

These popsicle molds are 4 oz each. That means you’ll need 24 oz total to fill them.

How many popsicles does this make?

This recipe makes 6 delicious Strawberry Kiwi Popsicles. We figured out early on that 6 wasn’t enough and started making them by the dozen!

Do I have to add chia seeds?

Definitely not! I like the “sneak” these little nutrition-packed seeds into as many recipes as I can, plus with the kiwi seeds they blend right in.

Strawberry Kiwi Popsicles

Equipment

Ingredients

  • 1.5 lbs whole strawberries
  • 1 lb kiwis about 4 large 2
  • 1 teaspoon chia seeds divided
  • 2 teaspoons lemon juice divided

Instructions

  • Create Strawberry Layer: Hull strawberries and add them to a blender with 1 teaspoon of lemon juice and half a teaspoon of chia seeds. Blend until the strawberries are a pourable puree. Note: If for some reason it is a thick blend that is not pourable, add a tablespoon of water and blend. All blended, it should be approximately 12 oz.
    Pour strawberries into a Pyrex with a pour spout, or another measuring cup with a pour spout.
  • Create Kiwi Layer: Peel the kiwis and give a rough chop. Rinse out your blender and add kiwis with 1 teaspoon of lemon juice and 1/2 chia seeds and blend until it's a pourable puree. All blended, it should be approximately 12 oz.
    Pour kiwis into a Pyrex with a pour spout, or another measuring cup with a pour spout.
  • Fill Popsicle Molds: Set up popsicle molds and pour a layer of strawberry in each then a layer of kiwi. Repeat until all fruit puree has been added to popsicle molds.
    Optional: Use a butter knife to put into molds and push one layer of fruit into the other to add color design in the popsicles.
  • Freeze: Add molds to the freeze and let freeze for at least 4-5 hours.
  • Enjoy!

Notes

The nutritional value is per popsicle.
Blending Tips
Dependent upon the power of your blender, chop your fruit for easier blending. With a high-powered blender, you can add the fruit nearly whole, but you may want to chop the fruit up for a blender that’s not as powerful. 
Add a tablespoon of water if your fruit blends are not pourable out of your blender. 
Filling Popsicle Molds
These popsicle molds are 4 oz each, so that means you need a total of 24 oz to fill 6.  This recipe will make about 12 oz of each strawberry and kiwi pureed but may be a little more dependent upon how you’re measuring your fruit. 
Using a measuring cup with a pour spout will make this much easier.
Substitutions
Lemon Juice: You could use lime, but lemon is really best because it highlights and compliments the flavors of strawberry and kiwi. Bottled or fresh is fine. 
Chia Seeds: These are totally optional, but we like the added nutrition they provide. 
Fruit: These are customizable! Use bananas instead of kiwis. Use raspberries instead of strawberries. The possibilities are endless!
