Homemade Banana Waffles

Get out of a waffle rut and use up some of those brown bananas!  These easy-to-make and customizable Homemade Banana Waffles from scratch will be your new weekend favorite!

Have I mentioned lately how much my husband and I love bananas?  Between the banana pecan muffins, and the banana maple munchkins, of course, we’d make Homemade Banana Waffles!  Especially now that I keep sliced bananas in our freezer at all times to be able to whip up some Peanut Butter Banana Ice Cream whenever the craving hits.  

This banana waffles recipe is one of my husband’s family recipes! It’s one that he remembers from his childhood and one that I am so happy to be able to share with our girls and be a part of their childhood!

Ingredients Needed

These homemade waffles are made with ingredients you probably already have in your panty!

  • Overripe Bananas – Fresh or frozen. We always keep some frozen bananas in our freezer for when the homemade waffle craving hits!
  • Flour – We use all-purpose, but they’re also great with some whole wheat flour or a gluten-free flour.
  • Milk – We use 2% but any that you have, even a nut milk would be great.
  • Egg Yolks – Just the yolks for this one, but don’t throw those whites away! You can use them to make some meringue kisses!
  • Baking Powder – The leavening agent to help get those waffles fluffy!
  • Butter – We use salted but you could also use unsalted and just add an extra pinch of salt to the batter.
  • Sugar – White granulated, but if all you have is brown, it will work too, it will just add a touch of a molasses flavor.
  • Vanilla Extract, Salt, and Nutmeg – For added flavor. By the way, have you made your own vanilla extract, yet??

How to Use (whole) Frozen Bananas

  • Take whole bananas out of freezer and let sit for 5 minutes
  • With a knife, gently remove peel
  • Let the banana thaw or heat in a microwave for 60-90 seconds

Easy to Make

Homemade waffles really are one of the easiest brunch recipes to make and this recipe is no exception.

  1. Mix together flour, baking powder, sugar, salt, and nutmeg in a bowl.
  2. Beat eggs and add milk and vanilla extract in another.
  3. Add flour mixture to wet and then stir in the mashed bananas and butter.
  4. Give a mix and add to a pre-heated waffle iron!

Now this is a very, very important piece to your waffle from scratch, the maple syrup! Now I know everyone has a different preference for their syrup, whether you swear by one brand or another, trust me, nothing beats a pure maple syrup from New England. Growing up in NH, this is our absolute favorite!

Then you just let your waffle iron do all of the work before adding some sliced bananas and a (healthy) dose of your favorite syrup!

FAQs

The batter is a little runny.

You want a batter that’s thick enough to pour into your waffle maker, but not one that’s too runny. If the batter seems really runny, just add a little more flour to thicken it.

Do I have to use frozen or fresh overripe bananas?

Whichever you have! It’s a great recipe to use when you have those overripe bananas on your counter, but we also put those in our freezer too for whenever we want to make some waffles. If using frozen, just thaw in the microwave for about 60 seconds before adding to the batter. Note this may add a little moisture to the batter, which may mean a little more flour is needed.

Can I use other fruits?

Definitely! Well mashed overripe pears are great, too! Or a combination of the two. Substitute in pureed pumpkin too for a pumpkin waffle!

Can I add other spices?

Of course! Add some cinnamon or all spice, or even apple pie spice or pumpkin spice!

Ingredients

  • 1 - 1 1/2 cups of flour Start with 1 cup but if the batter seems too wet, add another 1/2 cup
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • dash of salt
  • pinch of nutmeg
  • 2 eggs yolks
  • 1 cup of milk
  • 1/2 teaspoon vanilla
  • 1 cup of mashed bananas
  • 6 tablespoons of butter - melted
  • 1 large banana sliced in rounds

Instructions

  • Preheat waffle iron. Stir together flour, baking powder, salt, sugar, and nutmeg.
  • Beat egg yolks in another bowl with milk and vanilla. Stir in the flour mixture until blended. Stir in mashed bananas and butter.
  • Make waffles in waffle iron. Top with sliced bananas and maple syrup. Or melted chocolate. Or whipped cream. Or honey. Or hell, ice cream- whatever you want!

    Wonderful waffles! Made these this morning using Bisquick for half flour because I did not have baking powder…

    I am a big waffle connoisseur and would try to add back the egg whites by folding them into the batter after beating them into soft peaks. That should lighten the density a bit (and perhaps reduce the baking powder by a quarter or a half). Also, I simply can’t imagine banana waffles without adding – either to the batter or on top – toasted chopped walnuts.

    Sounds yummy already! Will try ASAP!

    These banana waffles look so delicious! What a great idea for using up ripe bananas! My parents have the largest maple syrup producing sugar house in Connecticut. I have my dad ship it to use here in North Carolina often! Be sure and check out granulated maple sugar if you’ve never used it before. Works great in recipes!

  4. Has anyone actually tried this? I just did and the mix is entirely too wet, and doesn’t cook like a waffle. If I had to guess I would say it’s an incorrect proportion of dry to wet, and I think into should have been the whole egg instead of just the yolks. Also way too much butter!

      I’m so sorry to hear this!! I’ve had a lot of people make them and about 75% have said the proportions are right but some have said that their batter they added an extra 1/2 cup of flour. I’ve tried both and mine seem too dense when I add the flour, but I will update the recipe now with that note! Thank you again for your feedback – I really appreciate it!

Just a tip for waffles in general, about once a wk my family has waffle night and a family fav for sure is to add peanut butter spread over them then add chocolate syrup , Caramel syrup (like the ice cream topping) , sliced bananas, toasted walnuts then a bit of maple syrup !!! It is ADDICTING!!! I use a Belgian waffle maker also. Wouldn’t use any other !
