Have I mentioned lately how much my husband and I love bananas? Between the banana pecan muffins, and the banana maple munchkins, of course, we'd make Homemade Banana Waffles! Especially now that I keep sliced bananas in our freezer at all times to be able to whip up some Peanut Butter Banana Ice Cream whenever the craving hits.
This banana waffles recipe is one of my husband's family recipes! It's one that he remembers from his childhood and one that I am so happy to be able to share with our girls and be a part of their childhood!

Ingredients Needed
These homemade waffles are made with ingredients you probably already have in your panty!
- Overripe Bananas - Fresh or frozen. We always keep some frozen bananas in our freezer for when the homemade waffle craving hits!
- Flour - We use all-purpose, but they're also great with some whole wheat flour or a gluten-free flour.
- Milk - We use 2% but any that you have, even a nut milk would be great.
- Egg Yolks - Just the yolks for this one, but don't throw those whites away! You can use them to make some meringue kisses!
- Baking Powder - The leavening agent to help get those waffles fluffy!
- Butter - We use salted but you could also use unsalted and just add an extra pinch of salt to the batter.
- Sugar - White granulated, but if all you have is brown, it will work too, it will just add a touch of a molasses flavor.
- Vanilla Extract, Salt, and Nutmeg - For added flavor. By the way, have you made your own vanilla extract, yet??
How to Use (whole) Frozen Bananas
- Take whole bananas out of freezer and let sit for 5 minutes
- With a knife, gently remove peel
- Let the banana thaw or heat in a microwave for 60-90 seconds

Easy to Make
Homemade waffles really are one of the easiest brunch recipes to make and this recipe is no exception.
- Mix together flour, baking powder, sugar, salt, and nutmeg in a bowl.
- Beat eggs and add milk and vanilla extract in another.
- Add flour mixture to wet and then stir in the mashed bananas and butter.
- Give a mix and add to a pre-heated waffle iron!
Now this is a very, very important piece to your waffle from scratch, the maple syrup! Now I know everyone has a different preference for their syrup, whether you swear by one brand or another, trust me, nothing beats a pure maple syrup from New England. Growing up in NH, this is our absolute favorite!
Then you just let your waffle iron do all of the work before adding some sliced bananas and a (healthy) dose of your favorite syrup!

FAQs
You want a batter that's thick enough to pour into your waffle maker, but not one that's too runny. If the batter seems really runny, just add a little more flour to thicken it.
Whichever you have! It's a great recipe to use when you have those overripe bananas on your counter, but we also put those in our freezer too for whenever we want to make some waffles. If using frozen, just thaw in the microwave for about 60 seconds before adding to the batter. Note this may add a little moisture to the batter, which may mean a little more flour is needed.
Definitely! Well mashed overripe pears are great, too! Or a combination of the two. Substitute in pureed pumpkin too for a pumpkin waffle!
Of course! Add some cinnamon or all spice, or even apple pie spice or pumpkin spice!

Ingredients
- 1 - 1 1/2 cups of flour Start with 1 cup but if the batter seems too wet, add another 1/2 cup
- 2 teaspoons baking powder
- 2 tablespoons sugar
- dash of salt
- pinch of nutmeg
- 2 eggs yolks
- 1 cup of milk
- 1/2 teaspoon vanilla
- 1 cup of mashed bananas
- 6 tablespoons of butter - melted
- 1 large banana sliced in rounds
Instructions
- Preheat waffle iron. Stir together flour, baking powder, salt, sugar, and nutmeg.
- Beat egg yolks in another bowl with milk and vanilla. Stir in the flour mixture until blended. Stir in mashed bananas and butter.
- Make waffles in waffle iron. Top with sliced bananas and maple syrup. Or melted chocolate. Or whipped cream. Or honey. Or hell, ice cream- whatever you want!

I made these this morning, and they were pretty good. I did have to add more than the 1 cup of flour, as the batter was too wet. The banana flavor is definitely there which I love, but they would not get crisp. I even cooked them twice as long as I usually do for waffles. May try them again with some adjustments to see if I can get them to crisp. Also add some chocolate chips after adding the batter to the waffle iron.
