Homemade Banana Waffles

Get out of a waffle rut and use up some of those brown bananas!  These easy-to-make and customizable Homemade Banana Waffles from scratch will be your new weekend favorite!

Have I mentioned lately how much my husband and I love bananas?  Between the banana pecan muffins, and the banana maple munchkins, of course, we’d make Homemade Banana Waffles!  Especially now that I keep sliced bananas in our freezer at all times to be able to whip up some Peanut Butter Banana Ice Cream whenever the craving hits.  

This banana waffles recipe is one of my husband’s family recipes! It’s one that he remembers from his childhood and one that I am so happy to be able to share with our girls and be a part of their childhood!

Ingredients Needed

These homemade waffles are made with ingredients you probably already have in your panty!

  • Overripe Bananas – Fresh or frozen. We always keep some frozen bananas in our freezer for when the homemade waffle craving hits!
  • Flour – We use all-purpose, but they’re also great with some whole wheat flour or a gluten-free flour.
  • Milk – We use 2% but any that you have, even a nut milk would be great.
  • Egg Yolks – Just the yolks for this one, but don’t throw those whites away! You can use them to make some meringue kisses!
  • Baking Powder – The leavening agent to help get those waffles fluffy!
  • Butter – We use salted but you could also use unsalted and just add an extra pinch of salt to the batter.
  • Sugar – White granulated, but if all you have is brown, it will work too, it will just add a touch of a molasses flavor.
  • Vanilla Extract, Salt, and Nutmeg – For added flavor. By the way, have you made your own vanilla extract, yet??

How to Use (whole) Frozen Bananas

  • Take whole bananas out of freezer and let sit for 5 minutes
  • With a knife, gently remove peel
  • Let the banana thaw or heat in a microwave for 60-90 seconds

Easy to Make

Homemade waffles really are one of the easiest brunch recipes to make and this recipe is no exception.

  1. Mix together flour, baking powder, sugar, salt, and nutmeg in a bowl.
  2. Beat eggs and add milk and vanilla extract in another.
  3. Add flour mixture to wet and then stir in the mashed bananas and butter.
  4. Give a mix and add to a pre-heated waffle iron!

Now this is a very, very important piece to your waffle from scratch, the maple syrup! Now I know everyone has a different preference for their syrup, whether you swear by one brand or another, trust me, nothing beats a pure maple syrup from New England. Growing up in NH, this is our absolute favorite!

Then you just let your waffle iron do all of the work before adding some sliced bananas and a (healthy) dose of your favorite syrup!

FAQs

The batter is a little runny.

You want a batter that’s thick enough to pour into your waffle maker, but not one that’s too runny. If the batter seems really runny, just add a little more flour to thicken it.

Do I have to use frozen or fresh overripe bananas?

Whichever you have! It’s a great recipe to use when you have those overripe bananas on your counter, but we also put those in our freezer too for whenever we want to make some waffles. If using frozen, just thaw in the microwave for about 60 seconds before adding to the batter. Note this may add a little moisture to the batter, which may mean a little more flour is needed.

Can I use other fruits?

Definitely! Well mashed overripe pears are great, too! Or a combination of the two. Substitute in pureed pumpkin too for a pumpkin waffle!

Can I add other spices?

Of course! Add some cinnamon or all spice, or even apple pie spice or pumpkin spice!

Ingredients

  • 1 - 1 1/2 cups of flour Start with 1 cup but if the batter seems too wet, add another 1/2 cup
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • dash of salt
  • pinch of nutmeg
  • 2 eggs yolks
  • 1 cup of milk
  • 1/2 teaspoon vanilla
  • 1 cup of mashed bananas
  • 6 tablespoons of butter - melted
  • 1 large banana sliced in rounds

Instructions

  • Preheat waffle iron. Stir together flour, baking powder, salt, sugar, and nutmeg.
  • Beat egg yolks in another bowl with milk and vanilla. Stir in the flour mixture until blended. Stir in mashed bananas and butter.
  • Make waffles in waffle iron. Top with sliced bananas and maple syrup. Or melted chocolate. Or whipped cream. Or honey. Or hell, ice cream- whatever you want!

    My 7 year old made these to have with breakfast. He follows the rules to taste what you’re making. He’s the batter smelled so good he had to taste it. He ate a couple spoonfuls to make sure it was good! Everyone loved them! And it used up three very ripe bananas.

    4 stars only because l didn’t get a chance to taste myself….my 10 and 17 Yr old demolished them and loooved them :). First time making these and recipe was easy to follow. My first batch was slightly runny but did add more flour and that helped…think l mashed the bananas way too much so that might not have helped. Looks like a new fav in our house! Thank you.

    So this recipe is great, not only does it taste good it’s forgiving to experimentation. I’ve used whole eggs instead of whites, subbed in half whole wheat flour, used soy milk instead of regular dairy, even combined it with elements of my favorite apple-cinnamon waffles recipe and it always turns out great. Only bit of advice I have is if you have a ceramic waffle maker you’re going to want to significantly reduce the butter. The first time I made the recipe as-is I had butter oozing out the sides of my waffle maker. I’ve gradually cut down the butter every time I’ve made this recipe, as of this morning I’m down to 1 tablespoon with no problems.

    Hi, thanks for this recipe! I just wanted to report back that I used it as a base for pumpkin waffles, and that also came out great!

      1. The recipe is delicious. 2 things:

        – a tad small, could do with more (for 4)
        – Folded in the egg whites (after beating them into fluffy peaks, forget the actual word). This makes them even fluffier

    I’m from Ireland, so waffle making doesn’t come naturally to me. However these banana ones of yours actually turned out really well. Big hit with the family. I’ll check out your other recipes too based on my experience with this one. Thankyou x

  6. Oh so good!! Made a few adjustments, and used my Dash Mini Waffle Maker. We had breakfast for dinner and breakfast meal prep for the rest of the week.

    Yum! I skipped the sugar ’cause my bananas were overripe and I had to use allspice instead of nutmeg. I added the 1/2 of flour as suggested when the first waffles were too flimsy. Great with syrup and fresh strawberries on top. My scrawny five-year old had seconds 🙂 Thank you very much for sharing. Great way to use up the last two bananas that were going black in my fridge. I will probably use again. One batch served our young family of 5 (although if I had more ripe bananas I would’ve been sorely tempted to make a second batch).       Great recipe. Had some ripe bananas, so decided to give it a try. They were delicious. I added cinnamon and skipped the salt. First time making waffles from scratch. Very easy recipe to follow. Hubby is very picky and he went back for seconds. Will definitely make again, wouldn’t change a thing,

      This recipe is perfect. I’ve made it a number of times and it’s always a winner. I use the full 1.5 cups of flour.

          These are some of the most banana flavor packed waffles I’ve made so far. I used about 1 and 1/4 cup flour and they turned out perfectly. Added a bit of cinnamon to mine but otherwise followed the recipe. They are amazing.
